Chocolate Rice Krispie Balls
Ingredients:
- Ā½ cup peanut butter
- 3 tablespoons softened butter
- 1 teaspoon vanilla extract
- 1 cup Rice Krispies cereal
- Ā½ cup chopped pecans
- 1 cup grated coconut
Instructions:
- Combine Ingredients: In a mixing bowl, blend together peanut butter, softened butter, and vanilla extract. Stir in Rice Krispies cereal, chopped pecans, and grated coconut until evenly mixed.
- Chill Mixture: Refrigerate the mixture for 30 minutes to firm up. Once chilled, shape into small balls and return to the refrigerator. Allow them to cool for at least one hour.
- Prepare Chocolate Coating: In a double boiler over low heat, melt together 1 bag of chocolate chips and 1 piece of sweet chocolate. Stir frequently to maintain a smooth consistency.
- Coat Balls: Dip each ball into the melted chocolate, using a fork to ensure an even coating. Place the coated balls on a parchment-lined tray and return to the refrigerator to set.
