Chocolate Rice Krispie Balls

Ingredients:

  • Ā½ cup peanut butter
  • 3 tablespoons softened butter
  • 1 teaspoon vanilla extract
  • 1 cup Rice Krispies cereal
  • Ā½ cup chopped pecans
  • 1 cup grated coconut

Instructions:

  1. Combine Ingredients: In a mixing bowl, blend together peanut butter, softened butter, and vanilla extract. Stir in Rice Krispies cereal, chopped pecans, and grated coconut until evenly mixed.
  2. Chill Mixture: Refrigerate the mixture for 30 minutes to firm up. Once chilled, shape into small balls and return to the refrigerator. Allow them to cool for at least one hour.
  3. Prepare Chocolate Coating: In a double boiler over low heat, melt together 1 bag of chocolate chips and 1 piece of sweet chocolate. Stir frequently to maintain a smooth consistency.
  4. Coat Balls: Dip each ball into the melted chocolate, using a fork to ensure an even coating. Place the coated balls on a parchment-lined tray and return to the refrigerator to set.
