- 1 cup (2 sticks) unsalted butter, softened
- 1 tsp vanilla extract
- 4 cups powdered sugar
- 3 cups semi-sweet chocolate chips (or milk chocolate chips)
- 2 tbsp shortening (for smoother chocolate coating)

- Make the filling: In a large bowl, mix peanut butter, butter, and vanilla until smooth. Gradually add powdered sugar and mix until a dough forms.
- Shape the balls: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the freezer for 30 minutes until firm.
- Melt the chocolate: In a microwave-safe bowl, melt chocolate chips with shortening in 30-second intervals, stirring until smooth and glossy.
- Dip and coat: Using a fork or toothpick, dip each peanut butter ball into the melted chocolate and allow excess to drip off. Place back on the lined sheet.
- Set and store: Refrigerate until the chocolate hardens (about 1 hour). Store in an airtight container in the fridge.
