Chicken Spinach & Mushroom Low Carb Oven Dish

Ingredients

  • 6 thin sliced chicken breasts
  • 1 small bag fresh baby spinach
  • 1 large package sliced mushrooms
  • 1 container green onion cream cheese
  • 8 oz shredded mozzarella cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 dash pepper
  • 1 dash Herb & Garlic seasoning

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts lightly with pepper and herb & garlic seasoning.
  3. In a skillet, heat olive oil and lightly brown the chicken on both sides (do not fully cook). Remove and set aside.
  4. Add mushrooms to the same skillet and sauté until softened.
  5. Add spinach and cook until wilted.
  6. Stir in the cream cheese and chicken broth until melted and creamy.
  7. Place browned chicken breasts in a greased baking dish.
  8. Pour spinach–mushroom cream mixture over the chicken.
  9. Top with shredded mozzarella cheese.
  10. Bake 20–25 minutes or until the chicken is fully cooked and cheese is bubbly and golden.

Notes

  • For extra flavor, add minced garlic when sautéing mushrooms.
  • Use parmesan cheese along with mozzarella for a richer topping.
  • This dish is keto-friendly and reheats well for meal prep.
