Chicken Spinach & Mushroom Low Carb Oven Dish
Ingredients
- 6 thin sliced chicken breasts
- 1 small bag fresh baby spinach
- 1 large package sliced mushrooms
- 1 container green onion cream cheese
- 8 oz shredded mozzarella cheese
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1 dash pepper
- 1 dash Herb & Garlic seasoning
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts lightly with pepper and herb & garlic seasoning.
- In a skillet, heat olive oil and lightly brown the chicken on both sides (do not fully cook). Remove and set aside.
- Add mushrooms to the same skillet and sauté until softened.
- Add spinach and cook until wilted.
- Stir in the cream cheese and chicken broth until melted and creamy.
- Place browned chicken breasts in a greased baking dish.
- Pour spinach–mushroom cream mixture over the chicken.
- Top with shredded mozzarella cheese.
- Bake 20–25 minutes or until the chicken is fully cooked and cheese is bubbly and golden.
Notes
- For extra flavor, add minced garlic when sautéing mushrooms.
- Use parmesan cheese along with mozzarella for a richer topping.
- This dish is keto-friendly and reheats well for meal prep.
