🍒 Cherry Pie Bars

These Cherry Pie Bars are a delightful mix of buttery crust, sweet-tart cherry filling, and soft cake-like texture — the perfect quick dessert for any occasion. So easy and absolutely delicious!

Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional but amazing!)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 (21 oz) can cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add vanilla and almond extracts.
  4. Gradually mix in the flour and salt until just combined.
  5. Spread about 2/3 of the batter evenly in the prepared pan.
  6. Spread the cherry pie filling over the batter layer.
  7. Drop spoonfuls of the remaining batter on top — it doesn’t need to cover completely.
  8. Bake for 30–35 minutes, or until golden brown.
  9. Cool completely before cutting into bars.

Tip: Drizzle a simple glaze made from powdered sugar and milk over the cooled bars for an extra sweet touch!
