These Cherry Pie Bars are a delightful mix of buttery crust, sweet-tart cherry filling, and soft cake-like texture — the perfect quick dessert for any occasion. So easy and absolutely delicious!
Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional but amazing!)
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 (21 oz) can cherry pie filling
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla and almond extracts.
- Gradually mix in the flour and salt until just combined.
- Spread about 2/3 of the batter evenly in the prepared pan.
- Spread the cherry pie filling over the batter layer.
- Drop spoonfuls of the remaining batter on top — it doesn’t need to cover completely.
- Bake for 30–35 minutes, or until golden brown.
- Cool completely before cutting into bars.
Tip: Drizzle a simple glaze made from powdered sugar and milk over the cooled bars for an extra sweet touch!
