Ingredients
For the Base Layer:
- 2 cups crushed vanilla wafers (or graham crackers)
- 1/2 cup melted butter
- 2 tbsp sugar (optional)
For the Cream Layer:
- 2 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar, sifted
- 1 tsp vanilla extract
- 2 cups whipped topping (or homemade whipped cream)
For the Topping:
- 1 can (21 oz) cherry pie filling
Instructions
1. Prepare the Cookie Base
- In a bowl, mix crushed vanilla wafers with melted butter until well combined.
- Press the mixture firmly into the bottom of a 9×13-inch dish to form an even crust.
- Refrigerate for 15–20 minutes to help it set.
2. Make the Cream Cheese Filling
- Beat the softened cream cheese until smooth and creamy.
- Add powdered sugar and vanilla extract; continue mixing until fully combined.
- Fold in the whipped topping gently using a spatula—do not overmix.
3. Layer the Dessert
- Spread the cream cheese mixture evenly over the chilled cookie crust.
- Spoon the cherry pie filling carefully on top, spreading it in an even layer.
4. Chill & Serve
- Cover and refrigerate for at least 4 hours, preferably overnight for best texture.
- Slice into squares and serve chilled.
Tips
- For a firmer crust, bake the cookie base for 8 minutes at 180°C (350°F), then cool completely.
- Use cold cream cheese and whipped topping for a thicker filling.
- You can replace cherries with blueberries, strawberries, or mixed berries.
- To cut perfect slices, chill overnight and use a knife dipped in hot water.
- Add lemon zest to the cream layer for a refreshing flavor boost.
