Cheesy Spinach Chicken Meatballs

🧀 Cheesy Spinach Chicken Meatballs 🍗
This was my absolute favorite dish back in the day. I couldn’t get enough and always asked my mom to whip it up!
Ingredients
- 1 lb ground chicken (or turkey)
- 1 cup fresh spinach, chopped
- 1 cup shredded mozzarella cheese (divided)
- ¼ cup grated Parmesan cheese
- 1 egg
- ½ cup breadcrumbs
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: to 400°F (200°C) and line a baking dish with foil or parchment paper.
- Make meatballs: In a large bowl, mix ground chicken, spinach, half the mozzarella, Parmesan, egg, breadcrumbs, garlic, salt, and pepper. Form into medium-sized balls.
- Cook: Heat olive oil in a skillet over medium heat. Sear the meatballs for 2–3 minutes on each side until lightly browned.
- Prepare sauce: In a saucepan, melt butter, then pour in heavy cream. Stir until warm, then add remaining mozzarella and stir until smooth and creamy.
- Bake: Place seared meatballs in the prepared dish, pour sauce over the top, and bake for 20–25 minutes until bubbly and golden.
- Serve: Garnish with parsley and enjoy with rice, pasta, or crusty bread.
💡 Tip: For extra flavor, add a pinch of red pepper flakes to the sauce or mix in some shredded cheddar for a cheesy twist.
