Cheesy Mashed Potato Muffins

🥣 Ingredients

  • 3 cups mashed potatoes (leftovers work great!)
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup milk
  • 2 tablespoons melted butter
  • Salt and pepper, to taste
  • 2 tablespoons chopped green onions (plus more for garnish)
  • Optional: ½ cup cooked bacon bits or diced ham

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with parchment liners.
  2. In a large bowl, mix mashed potatoes, eggs, milk, melted butter, cheese, salt, pepper, and green onions until combined.
  3. Spoon the mixture into muffin cups, filling each about ¾ full.
  4. Sprinkle extra cheese on top for that golden, melty crust.
  5. Bake for 20–25 minutes, or until tops are lightly browned and set.
  6. Cool slightly before removing from the pan. Garnish with extra green onions and serve warm!
💡 Tip: Perfect for using up leftover mashed potatoes! You can also add bits of cooked broccoli or jalapeños for extra flavor.
