Cheesy Beef Stuffed Tortilla Bake

A rich, comforting baked dish filled with seasoned beef and loads of melted cheese. One of those recipes that disappears fast once it hits the table.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 1/2 cups shredded mozzarella or Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 8 flour tortillas (soft taco size)
  • 2 tablespoons butter, melted
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until browned.
  3. Add garlic, paprika, chili powder, salt, and pepper. Stir well and remove from heat.
  4. Mix sour cream with half of the shredded cheese.
  5. Spoon beef mixture onto each tortilla, add a spoonful of the sour cream mixture, and roll tightly.
  6. Place rolled tortillas seam-side down in the baking dish.
  7. Brush tops with melted butter and sprinkle remaining cheese over them.
  8. Bake uncovered for 25–30 minutes until golden and bubbly.

Serving Tip: Let rest for 5 minutes before serving. Sprinkle with fresh parsley and serve with a simple salad or salsa.
