Cheese & Pepperoni Rice Balls
Ingredients:
- 2 cups cooked rice
- 4 eggs
- Salt and black pepper to taste
- Parsley to taste
- 150 grams grated mozzarella cheese
- 1 slice grated Calabrese pepperoni
- 3 tablespoons whole wheat flour
- 1/2 tablespoon baking powder
- Breadcrumbs for breading
Instructions:
- In a large bowl, combine the cooked rice, 2 eggs, salt, black pepper, and chopped parsley. Stir the mixture thoroughly for about a minute.
- Add the grated mozzarella cheese, grated pepperoni, whole wheat flour, and baking powder to the rice mixture.
- Mix everything together using your hands until a firm dough forms.
- Scoop out a tablespoon of the dough and shape it into small balls.
- Optional: Flatten the dough slightly in your hands, place a cube of mozzarella cheese in the center, and roll the dough around it to form a stuffed rice ball.
- Once all the balls are formed, coat each one by rolling them first in flour, then dipping them into beaten eggs, and finally covering them with breadcrumbs.
- Fry the rice balls in hot oil until they turn golden brown. Drain them on paper towels to remove excess oil.
