Cheese & Pepperoni Rice Balls

Ingredients:

  • 2 cups cooked rice
  • 4 eggs
  • Salt and black pepper to taste
  • Parsley to taste
  • 150 grams grated mozzarella cheese
  • 1 slice grated Calabrese pepperoni
  • 3 tablespoons whole wheat flour
  • 1/2 tablespoon baking powder
  • Breadcrumbs for breading

Instructions:

  1. In a large bowl, combine the cooked rice, 2 eggs, salt, black pepper, and chopped parsley. Stir the mixture thoroughly for about a minute.
  2. Add the grated mozzarella cheese, grated pepperoni, whole wheat flour, and baking powder to the rice mixture.
  3. Mix everything together using your hands until a firm dough forms.
  4. Scoop out a tablespoon of the dough and shape it into small balls.
    • Optional: Flatten the dough slightly in your hands, place a cube of mozzarella cheese in the center, and roll the dough around it to form a stuffed rice ball.
  5. Once all the balls are formed, coat each one by rolling them first in flour, then dipping them into beaten eggs, and finally covering them with breadcrumbs.
  6. Fry the rice balls in hot oil until they turn golden brown. Drain them on paper towels to remove excess oil.
