Caramel Nut Ritz Cookies

Description: “I make this every Christmas and literally have to make it in the dead of the night and hide it from my family! Self control just doesn’t exist when it comes to this stuff!”
These caramel-coated nutty Ritz cookies are dangerously addictive and incredibly easy.

Ingredients

  • 1 sleeve of Ritz crackers
  • 1 cup soft caramels (or caramel baking bits)
  • 2 tbsp heavy cream (or milk)
  • 1/2 cup chopped nuts (almonds, pecans, or peanuts)
  • 1/4 tsp sea salt (optional)

Instructions

  1. Line a baking sheet with parchment paper and arrange Ritz crackers in a single layer.
  2. In a microwave-safe bowl, melt caramels with heavy cream in 20–30 second intervals, stirring until smooth.
  3. Spoon a small amount of caramel onto each cracker and spread lightly.
  4. Sprinkle chopped nuts over the warm caramel.
  5. Optional: sprinkle a tiny pinch of sea salt on top.
  6. Let cool completely at room temperature or place in the fridge to set.
  7. Once firm, store in an airtight container.

Notes

  • Dip or drizzle chocolate over the top for a deluxe version.
  • Use cashews or macadamia nuts for a richer flavor.
  • Perfect make-ahead Christmas treat — lasts up to 1 week.
