Ingredients

For the Steak Bites:

  • 1 lb (450g) sirloin steak, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon olive oil

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and cubed
  • 1/2 cup milk (or heavy cream)
  • 4 tablespoons butter
  • Salt and pepper, to taste
  • Fresh chives, chopped (for garnish, optional)

Instructions

For the Mashed Potatoes:

  1. Boil the Potatoes: In a large pot, place the peeled and cubed potatoes, covering them with water. Add a pinch of salt, then bring the water to a boil over medium-high heat. Cook the potatoes for 15-20 minutes or until tender.
  2. Mash the Potatoes: Once cooked, drain the potatoes and return them to the pot. Add the butter and milk, mashing until smooth and creamy. Season with salt and pepper to your preference, and keep the mashed potatoes warm until serving.

For the Steak Bites:

  1. Season the Steak: Generously season the sirloin steak bites with salt and pepper.
  2. Sear the Steak: Heat the olive oil in a large skillet over high heat. Add the steak pieces in a single layer, cooking for about 2-3 minutes per side until well-browned and cooked to your desired doneness. If necessary, work in batches to avoid overcrowding the pan. Once done, remove the steak from the skillet and set aside.
  3. Prepare the Garlic Butter Sauce: Lower the heat to medium, and in the same skillet, melt 2 tablespoons of butter. Add the minced garlic, thyme, and rosemary, stirring frequently. Let the garlic cook until it’s fragrant and slightly golden, about 1-2 minutes.
  4. Combine the Steak with the Sauce: Return the cooked steak bites to the skillet, tossing them in the garlic butter sauce until fully coated. Allow them to cook for an additional 1-2 minutes to absorb the flavors. Finally, stir in the remaining 2 tablespoons of butter until fully melted.

To Serve:

  • Plate the Dish: Serve the steak bites over a bed of creamy mashed potatoes. Drizzle any remaining garlic butter sauce from the skillet over the top of the steak and potatoes.
  • Garnish: Optionally, garnish with freshly chopped parsley and chives for an extra touch of flavor and color.

Enjoy this delicious, savory meal!
