Burnt Basque Cheesecake

Creamy on the inside, deeply caramelized on top —
this rustic cheesecake is effortlessly elegant and unforgettable.

Ingredients

  • 2 cups (450g) cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • ¼ cup all-purpose flour
  • ¼ tsp salt

Instructions

  1. Preheat oven to 400°F (205°C). Line an 8-inch springform pan with parchment paper, letting it overhang.
  2. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Pour in heavy cream and vanilla, mixing gently.
  5. Sift in flour and salt, then mix just until combined.
  6. Pour batter into the prepared pan.
  7. Bake for 45–50 minutes until the top is deeply golden and slightly cracked.
  8. Remove from oven and let cool completely. The center will set as it cools.
  9. Chill for at least 2 hours before slicing (optional but recommended).

Bake Time: 50 minutes
Servings: 8 slices
