Blueberry Cream Cheese Loaf 💜

🛒 Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk or sour cream
  • 1 cup fresh or frozen blueberries (lightly floured)

🧀 Cream Cheese Swirl

  • 8 oz cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • ½ teaspoon vanilla extract

👩‍🍳 Directions

  1. Preheat oven to 350°F (180°C). Line a loaf pan with parchment.
  2. Mix flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until fluffy. Add eggs and vanilla.
  4. Add dry ingredients alternately with milk.
  5. Gently fold in blueberries.
  6. In another bowl, beat cream cheese, sugar, egg, and vanilla.
  7. Pour half the batter into pan, add cream cheese mixture, then remaining batter.
  8. Swirl gently with a knife.
  9. Bake for 55–65 minutes, until a toothpick comes out clean.
  10. Cool completely before slicing (if you can wait 😅).
💡 Tip: This loaf tastes even better the next day once the flavors fully settle.
