A hearty, comforting beef stew loaded with tender meat, potatoes, carrots, and rich flavor — the perfect one-pot meal for cozy nights!

Ingredients

  • 2 pounds beef stew meat, cubed
  • ½ cup all-purpose flour
  • 1 tablespoon seasoning salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 cup red wine (optional, can use more broth instead)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4–5 potatoes, cubed
  • 2 cups mushrooms, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Coat the Beef: In a large bowl, toss beef with flour, seasoning salt, and black pepper until evenly coated.
  2. Sear the Meat: Heat olive oil in a large Dutch oven or pot. Brown beef cubes on all sides (do in batches if needed). Remove and set aside.
  3. Sauté Aromatics: In the same pot, add onion and garlic. Cook until fragrant and softened.
  4. Deglaze: Stir in tomato paste, then pour in red wine (if using) to scrape up browned bits. Let simmer 2–3 minutes.
  5. Simmer: Add beef back to the pot along with broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours.
  6. Add Veggies: Stir in carrots, potatoes, and mushrooms. Simmer another 30–40 minutes until vegetables are tender and beef is melt-in-your-mouth soft.
  7. Finish & Serve: Discard bay leaves, adjust seasoning, and garnish with parsley. Serve hot with crusty bread.
