A hearty, comforting beef stew loaded with tender meat, potatoes, carrots, and rich flavor — the perfect one-pot meal for cozy nights!
Ingredients
- 2 pounds beef stew meat, cubed
- ½ cup all-purpose flour
- 1 tablespoon seasoning salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 cup red wine (optional, can use more broth instead)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4–5 potatoes, cubed
- 2 cups mushrooms, sliced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Fresh parsley, chopped (for garnish)
Instructions
- Coat the Beef: In a large bowl, toss beef with flour, seasoning salt, and black pepper until evenly coated.
- Sear the Meat: Heat olive oil in a large Dutch oven or pot. Brown beef cubes on all sides (do in batches if needed). Remove and set aside.
- Sauté Aromatics: In the same pot, add onion and garlic. Cook until fragrant and softened.
- Deglaze: Stir in tomato paste, then pour in red wine (if using) to scrape up browned bits. Let simmer 2–3 minutes.
- Simmer: Add beef back to the pot along with broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours.
- Add Veggies: Stir in carrots, potatoes, and mushrooms. Simmer another 30–40 minutes until vegetables are tender and beef is melt-in-your-mouth soft.
- Finish & Serve: Discard bay leaves, adjust seasoning, and garnish with parsley. Serve hot with crusty bread.
