A beloved Southern classic — this rich, buttery pound cake topped with silky homemade caramel icing is the kind of dessert that makes everyone feel right at home. Perfect for holidays, Sunday dinners, or any special occasion.

Ingredients

For the Pound Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup shortening
  • 3 cups granulated sugar
  • 5 large eggs
  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
  • 2 tsp vanilla extract

For the Caramel Icing:

  • 1 cup brown sugar
  • ½ cup granulated sugar
  • ½ cup butter
  • ½ cup evaporated milk (plus more if needed)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven: to 325°F (165°C). Grease and flour a Bundt or tube pan.
  2. Cream butter, shortening, and sugar: In a large mixing bowl, beat butter, shortening, and sugar together until light and fluffy (about 5 minutes).
  3. Add eggs: Add eggs one at a time, mixing well after each addition.
  4. Mix dry ingredients: In another bowl, combine flour, baking powder, and salt.
  5. Combine wet and dry: Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix in vanilla extract.
  6. Bake: Pour batter into the prepared pan and bake for 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before icing.
  7. Make the icing: In a saucepan over medium heat, combine brown sugar, granulated sugar, butter, and evaporated milk. Bring to a boil, stirring constantly. Let it simmer for 5–7 minutes until thickened. Remove from heat, add vanilla and salt, and beat with a whisk until creamy.
  8. Frost the cake: Pour warm icing over the cooled cake and let it set. The icing will firm up into a smooth caramel finish.
💡 Pro Tip: For an extra-decadent touch, drizzle a little extra warm caramel over each slice before serving — and pair with a scoop of vanilla ice cream!
