This moist, sweet, and incredibly soft banana bread cake is topped with a creamy, rich cream cheese frosting. Perfect for breakfast, dessert, or a cozy afternoon treat!
Ingredients
For the Cake:
- 2 cups mashed ripe bananas (about 4)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
For the Cream Cheese Frosting:
- 4 oz (115g) cream cheese, softened
- 4 tbsp unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- Optional: pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well.
- Mix in the vanilla extract, sour cream, and mashed bananas until smooth.
- Fold the dry ingredients into the wet mixture until just combined—do not overmix.
- Pour the batter into the loaf pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove and allow to cool completely before frosting.
- For the frosting: Beat the cream cheese and butter together until creamy. Add vanilla, then gradually mix in the powdered sugar until smooth.
- Spread the cream cheese frosting over the cooled cake, slice, and enjoy!
Tips
- Use very ripe bananas for maximum sweetness and flavor.
- Add chopped walnuts or chocolate chips for a fun twist.
- If the frosting is too thick, add 1 tsp milk. If too thin, add a little more powdered sugar.
