Baked Potato Chicken & Broccoli Casserole


Baked Potato Chicken & Broccoli Casserole

A creamy, cheesy, family-friendly casserole loaded with tender chicken, soft potatoes, and fresh broccoli.

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 3 cups potatoes, small diced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (10.5 oz) cream of chicken soup
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup breadcrumbs (optional topping)
  • 2 tablespoons melted butter (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium casserole dish.
  2. Boil diced potatoes for 8–10 minutes until tender but not mushy. Drain.
  3. Lightly steam broccoli for 3 minutes or until bright green.
  4. In a large bowl, combine cooked chicken, potatoes, broccoli, garlic, and onion.
  5. Add sour cream, cream of chicken soup, paprika, salt, and pepper. Mix well.
  6. Stir in cheddar and mozzarella cheese.
  7. Transfer mixture to the casserole dish.
  8. If using, mix breadcrumbs with melted butter and sprinkle on top.
  9. Bake for 25–30 minutes or until bubbly and golden on top.
  10. Let stand for 5 minutes before serving.
