Baked Chicken Thighs are a delicious and very simple main dish. These chicken thighs have a perfectly crispy skin and extra juicy meat! They are perfect served alongside mashed potatoes or scalloped potatoes.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp butter (optional, for extra crispiness)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: to 425°F (220°C). Pat the chicken thighs dry with paper towels.
- Season: In a small bowl, mix paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub the mixture evenly over the chicken thighs.
- Sear (optional): Heat olive oil in a skillet over medium-high heat. Sear chicken thighs, skin-side down, for 2–3 minutes until golden brown.
- Bake: Transfer chicken to a baking dish, skin-side up. Add small butter pieces on top if desired. Bake for 35–40 minutes or until internal temperature reaches 165°F (74°C).
- Finish: Broil for 2–3 minutes to crisp up the skin, then remove and let rest for 5 minutes.
- Serve: Garnish with chopped parsley and serve with mashed or scalloped potatoes.
💡 Tip: For extra flavor, add a few garlic cloves and lemon slices to the pan before baking!
