Aunt Bill’s Brown Candy 🍬

“I finally got this recipe from my mother last Christmas and made three batches of the stuff!
I always loved it as a kid and no one can keep their hands off it!” 💛
A melt-in-your-mouth old-fashioned fudge that’s pure caramel perfection.

Serves: 30–40 small squares

Ingredients

  • 2 cups (400 g) granulated sugar
  • 2 cups (480 ml) whole milk
  • 1 cup (200 g) brown sugar, packed
  • ½ cup (115 g) unsalted butter
  • 1 tsp vanilla extract
  • 2 cups (200 g) chopped pecans or mixed nuts
  • ¼ tsp salt
  • 1 tbsp corn syrup (optional – for smooth texture)

Instructions

  1. In a heavy-bottomed saucepan, combine granulated sugar and half of the milk over medium heat. Stir until sugar dissolves.
  2. Cook the mixture until it turns a light golden caramel color, stirring occasionally (about 15–20 minutes).
  3. Add brown sugar, remaining milk, and butter. Stir continuously until butter melts and mixture thickens (about 20 minutes more).
  4. Remove from heat and stir in vanilla, salt, and nuts. Mix well.
  5. Pour mixture into a buttered dish. Let it cool until firm, then cut into squares. 🍬
Pro Tip: For a creamy melt-in-your-mouth texture, beat the mixture with a wooden spoon for 5–7 minutes before pouring into the dish.
