Aunt Bill’s Brown Candy (Old-Fashioned Pecan Fudge)

Aunt Bill’s Brown Candy 🍬
“I finally got this recipe from my mother last Christmas and made three batches of the stuff!
I always loved it as a kid and no one can keep their hands off it!” 💛
A melt-in-your-mouth old-fashioned fudge that’s pure caramel perfection.
Prep: 15 mins
Cook: 45 mins
Total: 1 hr
Serves: 30–40 small squares
Ingredients
- 2 cups (400 g) granulated sugar
- 2 cups (480 ml) whole milk
- 1 cup (200 g) brown sugar, packed
- ½ cup (115 g) unsalted butter
- 1 tsp vanilla extract
- 2 cups (200 g) chopped pecans or mixed nuts
- ¼ tsp salt
- 1 tbsp corn syrup (optional – for smooth texture)
Instructions
- In a heavy-bottomed saucepan, combine granulated sugar and half of the milk over medium heat. Stir until sugar dissolves.
- Cook the mixture until it turns a light golden caramel color, stirring occasionally (about 15–20 minutes).
- Add brown sugar, remaining milk, and butter. Stir continuously until butter melts and mixture thickens (about 20 minutes more).
- Remove from heat and stir in vanilla, salt, and nuts. Mix well.
- Pour mixture into a buttered dish. Let it cool until firm, then cut into squares. 🍬
Pro Tip: For a creamy melt-in-your-mouth texture, beat the mixture with a wooden spoon for 5–7 minutes before pouring into the dish.
