Ingredients

For the Cream:

  • 1 egg

  • 2 tsp lemon juice
  • 30g (1.5 tbsp) butter

For the Cake:

  • 2 apples (1 diced, 1 thinly sliced)
  • 1 tbsp sugar
  • 2 eggs
  • A pinch of salt
  • 8g (1 tsp) vanilla sugar
  • 120g (0.6 cup) sugar
  • 100ml (1/2 cup) vegetable oil
  • 130ml (1/2 cup) warm milk
  • 280g (1.75 cups) flour
  • 16g (2 tsp) baking powder
  • 50g raisins
  • 1 egg yolk
  • 2 tbsp milk
  • Powdered sugar (optional, for dusting)

Instructions

Prepare the Cream:

  1. In a saucepan, whisk together 1 egg, a pinch of salt, 8g of vanilla sugar, and 60g of sugar.
  2. Add 40g of cornstarch and 250ml of milk, whisking until smooth and lump-free.
  3. Place the saucepan over medium heat, stirring constantly until the mixture thickens.
  4. Remove from heat and stir in 2 teaspoons of lemon juice and 30g of butter until well combined.
  5. Cover the surface of the cream with plastic wrap to prevent a skin from forming. Let it cool completely.

Prepare the Cake:

  1. Preheat the oven to 180Ā°C (356Ā°F).
  2. Line a 24cm cake pan with parchment paper.
  3. In a large bowl, whisk 2 eggs with a pinch of salt until frothy.
  4. Add 8g of vanilla sugar and 120g of sugar, mixing until the mixture becomes light and airy.
  5. Gradually pour in 100ml of vegetable oil and 130ml of warm milk, mixing well after each addition.
  6. Gently fold in 280g of flour and 16g of baking powder, stirring until just combined.
  7. Carefully mix in the diced apples and 50g of raisins.

Assemble the Cake:

  1. Pour half of the cake batter into the prepared pan.
  2. Evenly spread the cooled cream over the batter.
  3. Pour the remaining batter on top, ensuring the cream is fully covered.
  4. Arrange the thinly sliced apples over the surface of the batter.

Egg Wash:

  1. In a small bowl, mix 1 egg yolk with 2 tablespoons of milk.
  2. Brush this mixture over the apple slices.
