Lemon Loaf Cake

🍋 Lemon Loaf Cake

Moist, soft, and bursting with fresh lemon flavor!
This lemon loaf is so good it never lasts long in the house.

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup milk
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice

Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Grease and line a loaf pan.
  3. In a bowl, whisk eggs and sugar until light.
  4. Add oil, milk, lemon juice, zest, and vanilla. Mix well.
  5. Add flour, baking powder, and salt. Mix just until combined.
  6. Pour batter into pan and bake for 45–50 minutes.
  7. Let cool slightly.
  8. Mix glaze ingredients and pour over warm cake.
Tip: This cake tastes even better the next day after the lemon glaze soaks in!
