This classic Amish Butterscotch Cream Pie is silky, rich, and incredibly comforting! It’s an old-fashioned treat that melts in your mouth — smooth butterscotch filling with a buttery crust and whipped topping. A true homemade gem!
🧾 Ingredients
- 1 pre-baked 9-inch pie crust
- 1 cup brown sugar
- 1/4 cup unsalted butter
- 1/4 cup cornstarch
- 1/2 tsp salt
- 2 cups whole milk
- 3 egg yolks, lightly beaten
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (for topping)
- 2 tbsp powdered sugar (for topping)
👩🍳 Instructions
- Make the butterscotch base: In a saucepan, melt butter over medium heat. Add brown sugar and cook until thick and bubbly, about 3–4 minutes.
- Add milk mixture: In a bowl, whisk cornstarch, salt, milk, and egg yolks. Slowly pour this mixture into the pan, whisking constantly.
- Cook & thicken: Continue whisking over medium heat until the mixture thickens and coats the back of a spoon (about 5–7 minutes). Remove from heat and stir in vanilla.
- Fill the crust: Pour the butterscotch filling into the pre-baked crust. Smooth the top and chill for 2–3 hours or until set.
- Top & serve: Whip the heavy cream with powdered sugar until stiff peaks form. Spread or pipe on top of the chilled pie before serving.
💡 Tip: For deeper flavor, add a small pinch of sea salt or drizzle with caramel before serving!
