Creamy Jam-Filled Coconut Balls π₯₯π
βThese are my most popular cookies. I usually make at least 500 of these at Christmas. Simple, elegant, and full of amazing flavor!β πβ€οΈ
πͺ Ingredients
- 1 Β½ cups desiccated coconut (plus extra for rolling)
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
- Β½ cup cream cheese, softened
- Β½ cup raspberry or strawberry jam
- White chocolate (for coating)
π§ Instructions
- In a large bowl, mix together the coconut, condensed milk, and vanilla until a soft dough forms.
- Take about 1 tablespoon of mixture and flatten it slightly in your hand.
- Add a small dollop of jam in the center and gently shape into a ball, sealing the edges.
- Place on parchment paper and freeze for 15β20 minutes to firm up.
- Melt white chocolate and dip each ball until fully coated.
- Roll in shredded coconut and let set on parchment paper until firm.
- Refrigerate for 1 hour before serving. Enjoy chilled!
