Cheesy Chicken Fritters

Ingredients

For the Chicken Fritters:

  • 1 ½ lbs chicken breasts (about 3 large)
  • 2 large eggs
  • ⅓ cup mayonnaise
  • ⅓ cup all-purpose flour (or cornstarch/potato starch for a gluten-free option)
  • 4 oz mozzarella cheese (approximately 1 ⅓ cups, shredded)
  • 1 ½ tbsp chopped fresh dill
  • ½ tsp salt (adjust to taste)
  • ⅛ tsp black pepper
  • 2 tbsp extra light olive oil (or any high-heat cooking oil)

For the Garlic Aioli Dip (Optional):

  • ⅓ cup mayonnaise
  • 1 garlic clove, pressed
  • ½ tbsp lemon juice
  • ¼ tsp salt
  • ⅛ tsp black pepper

Preparation

  1. Prepare the Chicken: Using a sharp knife, dice the chicken into pieces approximately ⅓ inch thick. Place them in a large mixing bowl.
    Tip: Partially frozen chicken breast is easier to slice.
  2. Combine the Batter: Add the remaining fritter ingredients to the mixing bowl: 2 eggs, ⅓ cup mayonnaise, ⅓ cup flour, 1 ⅓ cups shredded mozzarella, 1 ½ tbsp dill, ½ tsp salt, and ⅛ tsp black pepper. Stir the mixture until well combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  3. Cook the Fritters: Heat a large non-stick pan over medium heat and add 2 tbsp of oil. Once the oil is hot, drop heaping tablespoons of the chicken mixture into the pan. Slightly flatten the tops with the back of a spoon. Sauté uncovered for 3-4 minutes on the first side, then flip and cook for an additional 3 minutes, or until the outside is golden brown and the chicken is fully cooked. Repeat with the remaining fritter mixture, adding more oil as necessary.
  4. Make the Aioli (if using): In a small bowl or measuring cup, combine all aioli ingredients and stir until smooth.

Recipe Notes

To ensure the fritters are fully cooked, cut one in half—the chicken should be completely white inside. If the fritters are browning too quickly, reduce the heat.
