Mini Meatloaf with Potatoes
A hearty and comforting slow cooker meal that’s easy and full of flavor.
Ingredients
- 1 lb (450g) ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 small onion (finely chopped)
- 4–5 potatoes (cut into chunks)
- 1/2 cup ketchup or BBQ sauce
- Salt and pepper to taste
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, onion, salt, and pepper.
- Shape the mixture into small mini meatloaves.
- Place potato chunks at the bottom of the slow cooker.
- Arrange mini meatloaves on top of the potatoes.
- Spread ketchup or BBQ sauce over the meatloaves.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Serve hot with the potatoes.
Tip
Add carrots or garlic for extra flavor.
