Crispy Fried Potatoes with Onions
Ingredients:
- 2 pounds Russet potatoes, peeled and diced into 1-inch cubes
- 1 onion, finely diced
- 1/2 cup vegetable oil
- Salt, pepper, and garlic powder to taste
Instructions:
- Begin by peeling and cutting the Russet potatoes into 1-inch cubes. Set aside.
- Finely dice the onion and keep it ready for cooking.
- In a 10-inch skillet, pour enough vegetable oil to generously coat the bottom. Heat the oil over medium heat until it reaches the right temperature.
- Carefully add the diced potatoes and onions to the skillet. Season generously with salt, pepper, and garlic powder. Stir well to ensure even seasoning.
- Cover the skillet and let the mixture cook undisturbed for about 10 minutes.
- After 10 minutes, uncover the skillet, stir, and flip the potatoes to promote even browning. Continue to cook uncovered for an additional 10-15 minutes or until the potatoes have reached your desired level of tenderness and a golden-brown color.
