Creamy Cajun Garlic Chicken Spaghetti with Mozzarella Parmesan Sauce

This creamy Cajun garlic chicken spaghetti is the ultimate comfort food.
Juicy seasoned chicken, perfectly cooked spaghetti, and a rich mozzarella parmesan cream sauce come together for a bold, satisfying dinner the whole family will love.

Ingredients

  • 1 pound spaghetti
  • 1.5 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 4 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain and toss lightly with olive oil. Set aside.
  2. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  3. Add chicken pieces and season with Cajun seasoning, paprika, salt, and pepper.
  4. Cook until golden and fully cooked through. Remove and keep warm.
  5. In the same skillet, melt remaining butter. Add garlic and sauté until fragrant.
  6. Pour in heavy cream and chicken broth. Bring to a gentle simmer.
  7. Mix cornstarch with cold water until smooth. Slowly whisk into sauce until thickened.
  8. Reduce heat and stir in mozzarella and Parmesan until melted and smooth.
  9. Return chicken to skillet and coat in sauce.
  10. Add spaghetti and toss until fully coated.
  11. Simmer for 2–3 minutes to blend flavors. Serve hot.
