Sachertorte is a classic Austrian chocolate cake known for its elegant simplicity and rich flavor.
This refined dessert features a dense chocolate sponge layered with apricot jam and finished with a smooth, glossy chocolate glaze.
Traditionally served with whipped cream, it’s a timeless favorite for special occasions.
Ingredients
For the Cake
- 1 cup dark chocolate, chopped
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
For the Filling
- 1/2 cup apricot jam
For the Chocolate Glaze
- 1/2 cup heavy cream
- 1 cup dark chocolate, chopped
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
- Melt chocolate gently and let cool slightly.
- Cream butter and half the sugar until light and fluffy.
- Add egg yolks one at a time, then vanilla and melted chocolate.
- In a separate bowl, beat egg whites with remaining sugar until stiff peaks form.
- Fold egg whites gently into chocolate mixture.
- Sift in flour and salt, folding carefully to combine.
- Pour batter into prepared pan and bake 35–40 minutes.
- Cool completely, then slice cake horizontally.
- Spread warmed apricot jam evenly between layers and over the top.
- For glaze, heat cream until steaming, pour over chocolate, and stir until smooth.
- Pour glaze over cake, allowing it to drip evenly down the sides.
- Let set before slicing.
