For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tbsp sugar
For the Cheesecake Layer:
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
For the Apple Layer:
- 2 cups peeled & diced apples (Granny Smith or Honeycrisp)
- 2 tbsp sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
For the Streusel Topping:
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 cup cold butter, cubed
For the Finish:
- 1/2 cup caramel sauce (store-bought or homemade)

1️⃣ Prepare the Crust
Preheat oven to 350°F (175°C).
Mix graham crumbs, melted butter, and sugar.
Press firmly into a lined 9×13-inch pan.
Bake 8–10 minutes. Let cool slightly.
2️⃣ Make the Cheesecake Filling
Beat cream cheese and sugar until smooth.
Add eggs one at a time.
Mix in vanilla.
Spread evenly over crust.
3️⃣ Add the Apples
Toss diced apples with sugar and cinnamon.
Sprinkle evenly over cheesecake layer.
4️⃣ Make Streusel
Mix brown sugar and flour.
Cut in cold butter until crumbly.
Sprinkle over apples.
5️⃣ Bake
Bake 35–40 minutes or until center is set.
Cool completely, then refrigerate at least 3 hours.
6️⃣ Finish
Drizzle generously with caramel sauce before slicing into bars.
