Birria Wings with Consommé


Birria Wings with Consommé

Ingredients:

  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chili-garlic sauce (e.g., Sriracha)
  • 2 teaspoons dark sesame oil
  • 1 teaspoon freshly grated ginger
  • 16 chicken wings (wing tips removed)
  • Vegetable oil
  • Kosher salt
  • Freshly ground black pepper

Preparation:

  1. Prepare the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, hot chili-garlic sauce, sesame oil, and grated ginger.
  2. Prepare the Wings: Trim any excess skin from the edges of the chicken wings. Lightly brush or spray the wings with vegetable oil, then season them with kosher salt and freshly ground black pepper to taste.
  3. Grill the Wings: Preheat the grill to Direct Medium heat. Place the wings on the grill and cook until the skin begins to crisp, approximately 10 minutes, turning once or twice for even cooking.
  4. Glaze and Finish: Brush the wings with the prepared glaze. Continue grilling for an additional 8 to 10 minutes, or until the meat is cooked through and no longer pink at the bone. Turn and brush the wings with the glaze 2 to 3 times during this period.
  5. Serve Warm: Enjoy the wings warm, freshly glazed and grilled to perfection.

Recipe Notes:

For an alternative method, you can bake the wings at 375°F (190°C) for 45 minutes. After baking, coat the wings with the glaze and bake again at 400°F (200°C) for 20 minutes, or until the skin is browned and the glaze has thickened.
