French Onion Meatloaf with Melted Cheese
“I was skeptical at first, but OMG, this is the kind of recipe you’ll want to keep forever.”
Ingredients
- 2 lbs ground beef
- 1 cup caramelized onions
- 1 cup shredded mozzarella or Swiss cheese
- 1 cup beef broth
- 1 packet onion soup mix
- 2 eggs
- 1 cup breadcrumbs
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh thyme (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet and slowly caramelize onions until golden brown.
- In a large bowl, mix ground beef, eggs, breadcrumbs, onion soup mix, and pepper.
- Shape the mixture into a loaf and place it in a baking dish.
- Pour beef broth around the meatloaf.
- Bake uncovered for 45 minutes.
- Remove from oven, top with caramelized onions and shredded cheese.
- Return to oven and bake another 15 minutes until cheese is melted and bubbly.
- Rest for 5 minutes before serving.
Serving Ideas
- Serve with mashed potatoes
- Great with steamed green beans or roasted carrots
- Perfect comfort-food dinner
Chef’s Tip: For extra flavor, broil the cheese topping for 2–3 minutes at the end.
