🧁🍁 Pecan Pie Muffins
“My husband invited a couple of neighbors over, so I baked these.
They disappeared before dinner! Everyone kept asking for the recipe.”
Ingredients
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- Extra pecan halves for topping
Instructions
- Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
- In a bowl, whisk together flour, brown sugar, baking powder, and salt.
- Add eggs, melted butter, and vanilla. Mix until just combined.
- Fold in chopped pecans.
- Spoon batter evenly into muffin cups.
- Top each muffin with a pecan half.
- Bake for 20–25 minutes, until golden and set.
- Cool slightly before serving.
