Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles or rotini pasta
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add noodles, chicken, thyme, salt, and pepper.
  6. Simmer for 10–12 minutes until noodles are tender.
  7. Taste and adjust seasoning. Sprinkle with parsley if desired.
