Pineapple Pound Cake


🍍 Pineapple Pound Cake

Moist, buttery, and packed with sweet pineapple flavor

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup crushed pineapple (with juice)
  • ½ cup sour cream

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a bundt or loaf pan.
  2. Cream butter and sugar together until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the batter.
  6. Fold in crushed pineapple and sour cream until just combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 60–70 minutes, or until a toothpick comes out clean.
  9. Cool before removing from pan. Drizzle with glaze if desired.
Tip:
This cake tastes even better the next day and pairs perfectly with coffee or tea.
