One-Pan Herb-Crusted Chicken

🌿 One-Pan Herb-Crusted Chicken Breast
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 12 oz green beans, trimmed
- 4 tbsp olive oil (divided)
- 1 tbsp Dijon mustard
- 2 tsp lemon juice
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt & black pepper, to taste
- 4 garlic cloves, minced
- Optional: grated Parmesan cheese
Instructions
- Preheat oven to 425°F (220°C). Line a large baking tray with parchment paper.
- In a bowl, mix 2 tbsp olive oil, Dijon mustard, lemon juice, rosemary, thyme, garlic powder, paprika, salt, and pepper.
- Pat chicken dry and coat evenly with the herb mixture.
- Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 10 minutes.
- Add chicken to the tray and bake for another 15 minutes.
- Toss green beans with remaining olive oil and minced garlic.
- Add green beans to the tray and bake 8–10 more minutes, until chicken reaches 165°F (74°C).
- Serve hot, optionally topped with Parmesan and fresh lemon juice.
Tips & Variations:
