One-Pan Herb-Crusted Chicken


🌿 One-Pan Herb-Crusted Chicken Breast

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 12 oz green beans, trimmed
  • 4 tbsp olive oil (divided)
  • 1 tbsp Dijon mustard
  • 2 tsp lemon juice
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & black pepper, to taste
  • 4 garlic cloves, minced
  • Optional: grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking tray with parchment paper.
  2. In a bowl, mix 2 tbsp olive oil, Dijon mustard, lemon juice, rosemary, thyme, garlic powder, paprika, salt, and pepper.
  3. Pat chicken dry and coat evenly with the herb mixture.
  4. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 10 minutes.
  5. Add chicken to the tray and bake for another 15 minutes.
  6. Toss green beans with remaining olive oil and minced garlic.
  7. Add green beans to the tray and bake 8–10 more minutes, until chicken reaches 165°F (74°C).
  8. Serve hot, optionally topped with Parmesan and fresh lemon juice.
Tips & Variations:
• Swap herbs with Italian seasoning if needed.
• Add cherry tomatoes for extra flavor.
• Chicken thighs can be used for a juicier result.
