π° No-Bake Cheesecake in a Glass
Creamy, light, and irresistibly delicious β this no-bake cheesecake is perfect when you want an elegant dessert without turning on the oven.
Ingredients
- 1 packet tennis biscuits, crushed
- 2 tbsp melted butter
- 500 g cream cheese
- 250 g fresh cream (heavy whipping cream)
- ΒΌ cup icing (powdered) sugar
- 2 tbsp gelatin
- 4 tbsp boiling water
- 1 tsp vanilla extract or essence
Method
- Melt the butter and mix with the crushed biscuits until well combined.
- Spoon the biscuit mixture evenly into serving glasses and press lightly to form the base.
- Mix gelatin with boiling water, stirring until fully dissolved. Set aside to cool slightly.
- Whip fresh cream until stiff peaks form (about 3 minutes).
- In another bowl, beat cream cheese, icing sugar, and vanilla until smooth and creamy.
- Fold the cooled gelatin mixture into the cream cheese mixture.
- Gently fold in the whipped cream until fully combined.
- Spoon or pipe about Β½ cup of filling into each glass.
- Top with your favorite toppings: chocolate pieces, berries, or biscuit crumbs.
- Chill for at least 2 hours before serving.
