Cowboy Casserole

🤠 Cowboy Casserole

Hearty, cheesy, and pure comfort food.
Ingredients
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 can (15 oz) pinto beans, drained
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp cumin
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic; sauté until fragrant.
- Add ground beef and cook until browned; drain excess fat.
- Stir in potatoes, beans, tomatoes, and all seasonings.
- Transfer mixture to a greased baking dish.
- Cover with foil and bake for 35–40 minutes, until potatoes are tender.
- Remove foil, sprinkle cheese evenly on top.
- Bake uncovered for another 10 minutes, until cheese is melted and bubbly.
- Garnish with parsley and serve hot.
Make it extra hearty by adding corn, bell peppers, or a splash of beef broth before baking.
