🧾 Ingredients
- 20 oz cheese tortellini (fresh or refrigerated)
- 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
- Salt and black pepper, to taste
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ¾ cup whole milk
- 1¼ cups freshly grated Parmesan cheese
- 3 cups fresh spinach
- Optional: fresh parsley, red pepper flakes, cracked black pepper
👩🍳 Instructions
- Cook the tortellini:
Boil tortellini according to package instructions. Drain and set aside. - Sear the steak:
Season steak with salt, pepper, garlic powder, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat.
Sear steak bites for 3–5 minutes until browned and cooked to your liking.
Remove and set aside. - Make the parmesan sauce:
In the same skillet, melt butter. Add garlic and cook for 1 minute until fragrant.
Stir in heavy cream and milk, simmering for 3–4 minutes until slightly thickened. - Add cheese & spinach:
Stir in Parmesan cheese until melted and smooth.
Add spinach and cook just until wilted. Season to taste. - Bring it together:
Return steak and tortellini to the skillet.
Toss gently until everything is evenly coated in the creamy parmesan sauce. - Garnish & serve:
Finish with fresh parsley, cracked black pepper, and red pepper flakes if desired.
