Ingredients

  • 1 lb (450 g) ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup heavy cream or milk
  • Fresh parsley, for garnish

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Add the cooked beef to the slow cooker.
  3. Add potatoes, onion, garlic, beef broth, diced tomatoes, and tomato sauce.
  4. Season with paprika, Italian seasoning, salt, and pepper. Stir well.
  5. Cover and cook on LOW for 6–8 hours or until potatoes are tender.
  6. Stir in shredded cheese and cream during the last 20 minutes of cooking.
  7. Mix until the soup is creamy and cheese is fully melted.
  8. Garnish with fresh parsley and serve hot.
