Slow Cooker Cheesy Beef & Potato Soup

Ingredients
- 1 lb (450 g) ground beef
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup tomato sauce
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup heavy cream or milk
- Fresh parsley, for garnish
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
- Add the cooked beef to the slow cooker.
- Add potatoes, onion, garlic, beef broth, diced tomatoes, and tomato sauce.
- Season with paprika, Italian seasoning, salt, and pepper. Stir well.
- Cover and cook on LOW for 6β8 hours or until potatoes are tender.
- Stir in shredded cheese and cream during the last 20 minutes of cooking.
- Mix until the soup is creamy and cheese is fully melted.
- Garnish with fresh parsley and serve hot.
