Cheesy Beef Stuffed Tortilla Bake
A rich, comforting baked dish filled with seasoned beef and loads of melted cheese. One of those recipes that disappears fast once it hits the table.
Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 1/2 cups shredded mozzarella or Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 8 flour tortillas (soft taco size)
- 2 tablespoons butter, melted
- Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet over medium heat, cook ground beef and onion until browned.
- Add garlic, paprika, chili powder, salt, and pepper. Stir well and remove from heat.
- Mix sour cream with half of the shredded cheese.
- Spoon beef mixture onto each tortilla, add a spoonful of the sour cream mixture, and roll tightly.
- Place rolled tortillas seam-side down in the baking dish.
- Brush tops with melted butter and sprinkle remaining cheese over them.
- Bake uncovered for 25–30 minutes until golden and bubbly.
Serving Tip: Let rest for 5 minutes before serving. Sprinkle with fresh parsley and serve with a simple salad or salsa.
