Easy Pinto Beans, Green Chile & Beef Soup ❤️

Ingredients:
- 1 lb beef stew meat, cut into small cubes
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 can (4 oz) diced green chiles
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 4 cups beef broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- Fresh cilantro for garnish (optional)
Directions:
- Heat olive oil in a large pot over medium-high heat.
- Add beef cubes, season with salt and pepper, and sear until browned.
- Add onions and garlic; cook until softened.
- Stir in green chiles, pinto beans, bell pepper, and celery.
- Add beef broth, cumin, chili powder, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1–1.5 hours, or until beef is tender.
- Taste and adjust seasoning.
- Garnish with fresh cilantro and serve warm.
