KFC Biscuits

Ingredients:

  • 2 cups (240 g) all-purpose flour
  • 1 1/2 tsp (9 g) salt
  • 1 tbsp (12 g) sugar
  • 4 tsp (16 g) baking powder
  • 1/4 tsp (1 g) baking soda
  • 3 tbsp (42 g) vegetable shortening
  • 4 tsp (18 g) butter-flavor Crisco
  • 1 cup (240 ml) buttermilk
  • Whole milk, for brushing
  • Butter or margarine, for brushing after baking

Directions:

  1. Preheat oven to 400°F (205°C).
  2. Whisk flour, salt, sugar, baking powder, and baking soda in a large bowl.
  3. Cut in shortening and Crisco until mixture resembles coarse crumbs.
  4. Stir in buttermilk just until a soft, sticky dough forms.
  5. Turn dough onto a floured board and knead gently 10–12 times.
  6. Divide in half and pat each portion into an 8-inch round, 1/2 inch thick.
  7. Cut biscuits with a 2-inch cutter, reforming scraps as needed.
  8. Arrange biscuits on an ungreased baking sheet, edges touching lightly.
  9. Brush tops with milk and bake for about 15 minutes or until golden.
  10. Brush hot biscuits with melted butter and serve warm.
