Easy One-Bowl Carrot Cake 🥕✨

This is the easiest carrot cake you’ll ever make — all in ONE bowl, super moist, perfectly spiced, and topped with creamy frosting. A true family favorite!

Ingredients:

For the Cake:

  • 2 cups grated carrots
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ tsp salt
  • ½ cup crushed pineapple (optional)
  • ½ cup chopped pecans or walnuts
  • ½ cup raisins (optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Grease a round or square baking pan.
  2. In a large bowl, whisk together eggs, oil, sugars, and vanilla.
  3. Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined.
  4. Fold in grated carrots, nuts, raisins, and pineapple if using.
  5. Pour the batter into the pan and bake 30–35 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely.
  7. Beat together cream cheese, butter, powdered sugar, and vanilla to make the frosting.
  8. Spread over the cooled cake. Slice & enjoy!
