Greek Lemon Chicken & Potatoes 🥰🍋

A tender, juicy, lemony chicken dinner baked with soft potatoes and carrots — a Greek classic that never disappoints!

Ingredients:

  • 4 chicken thighs or breasts
  • 1 lb baby potatoes, halved
  • 3 large carrots, sliced
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp paprika
  • Salt & black pepper to taste
  • 1/2 cup chicken broth

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place chicken, potatoes, and carrots in a large baking dish.
  3. In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  4. Pour the mixture over the chicken and vegetables. Toss to coat evenly.
  5. Add chicken broth to the bottom of the pan.
  6. Bake uncovered for 45–55 minutes, basting halfway through, until golden and tender.
  7. Serve warm with extra pan juices drizzled on top. 😍
