Frijoles Borrachos

Frijoles Borrachos 🌶️🥘

“OMG, just like what mom used to make but had lost the recipe for ages! Made it for a family dinner and now I’m hooked to make it every weekend.”

Ingredients:

  • 3 cups cooked pinto beans (with broth)
  • 6 oz bacon, chopped
  • 1 cup Mexican beer
  • 1 smoked sausage or chorizo, sliced
  • 1 medium tomato, diced
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 jalapeño, diced
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • Salt & pepper to taste

Instructions:

  1. Cook bacon in a pot until crispy.
  2. Add sausage/chorizo and sauté 3 minutes.
  3. Stir in onion, garlic, tomato, and jalapeño. Cook until softened.
  4. Pour in the beer and simmer 3–5 minutes.
  5. Add cooked pinto beans with broth, cumin, salt, and pepper.
  6. Simmer 20–25 minutes until flavors combine.
  7. Top with fresh cilantro and serve hot.
