Carrot Cake Bars with Cream Cheese Frosting

Ingredients

For the Carrot Cake Bars:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • 4 tbsp butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Chopped walnuts for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch pan or line with parchment.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix oil, granulated sugar, and brown sugar. Add eggs and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in grated carrots and walnuts.
  6. Pour batter into the pan and bake 22–28 minutes. Cool completely.
  7. For frosting: beat cream cheese and butter until smooth. Add powdered sugar and vanilla.
  8. Spread frosting on cooled cake bars and top with walnuts.
  9. Slice into bars and enjoy!
