One-Pan Herb-Roasted Chicken with Potatoes & Green Beans

Ingredients:
- 4 boneless chicken breasts
- 500g baby potatoes, halved
- 250g green beans, trimmed
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt & black pepper
- Juice of 1 lemon
Instructions:
- Preheat oven to 200°C (400°F).
- Toss potatoes with oil, thyme, salt, and pepper. Spread in a baking dish.
- Mix remaining oil with garlic, paprika, thyme, parsley, and lemon juice.
- Rub chicken with the mixture and place it between the potatoes.
- Bake for 25 minutes.
- Add seasoned green beans and bake 15–20 minutes more.
- Rest 5 minutes before slicing and serve with pan juices.
Tips:
- Swap green beans for broccoli or asparagus.
- Use chicken thighs for richer flavor.
- Add chili flakes for heat or honey for sweetness.
