Six Minute Caramels
These soft, buttery homemade caramels come together in under 7 minutes using only the microwave. Perfect for gifting or enjoying as a sweet treat!
Ingredients
- 1/2 cup salted butter (melted)
- 1/2 cup light corn syrup
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon table salt (optional)
- Sea salt for topping (optional)
Directions
- Prepare the pan: Grease an 8Ć8 inch baking dish or line it with parchment paper.
- Mix ingredients: In a large microwave-safe bowl, combine the melted butter, corn syrup, granulated sugar, brown sugar, and sweetened condensed milk. Add table salt if you’re not sprinkling sea salt on top.
- Microwave: Heat the mixture for 6 minutes and 30 seconds (microwave power varies). Handle carefully ā it will be very hot. Stir in the vanilla extract.
- Let set: Pour the caramel into the prepared dish. If using, sprinkle sea salt while still warm. Allow it to cool completely. Refrigerating helps it firm up faster.
- Cut & wrap: Once firm, cut into pieces. A greased pizza cutter works well for soft caramel. Wrap individually if desired.
