Cheesy Potato & Hamburger Soup

🍲 Cheesy Potato & Hamburger Soup

This rich, comforting soup tastes so good that my family was convinced I ordered it from a gourmet restaurant! Creamy, cheesy, hearty, and packed with incredible flavor — now bacon-free!

Ingredients

  • 1 lb ground beef
  • 1 cup diced smoked turkey or beef sausage
  • 3 medium potatoes, peeled & diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. In a large pot, cook the ground beef until browned. Drain excess fat.
  2. Add diced smoked turkey/beef sausage and cook for 2 minutes to release flavor.
  3. Add chopped onion and garlic. Cook for 2–3 minutes until soft.
  4. Stir in diced potatoes, paprika, salt, and pepper. Mix well.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. In a small pan, melt butter and whisk in flour to create a roux. Cook for 1 minute.
  7. Add the roux to the soup and stir until slightly thickened.
  8. Pour in the heavy cream and add cheddar cheese. Stir until melted and creamy.
  9. Serve hot, topped with chopped green onions.

Tips

  • Smoked turkey or beef sausage gives the perfect smoky flavor without bacon.
  • Add a pinch of cayenne for a spicy kick.
  • For extra creaminess, blend 1 cup of the soup and add it back in.
