Cheesy Potato & Hamburger Soup

🍲 Cheesy Potato & Hamburger Soup
This rich, comforting soup tastes so good that my family was convinced I ordered it from a gourmet restaurant! Creamy, cheesy, hearty, and packed with incredible flavor — now bacon-free!
Ingredients
- 1 lb ground beef
- 1 cup diced smoked turkey or beef sausage
- 3 medium potatoes, peeled & diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tbsp butter
- 2 tbsp flour
- 1/2 tsp paprika
- Salt & pepper to taste
- Chopped green onions (for garnish)
Instructions
- In a large pot, cook the ground beef until browned. Drain excess fat.
- Add diced smoked turkey/beef sausage and cook for 2 minutes to release flavor.
- Add chopped onion and garlic. Cook for 2–3 minutes until soft.
- Stir in diced potatoes, paprika, salt, and pepper. Mix well.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- In a small pan, melt butter and whisk in flour to create a roux. Cook for 1 minute.
- Add the roux to the soup and stir until slightly thickened.
- Pour in the heavy cream and add cheddar cheese. Stir until melted and creamy.
- Serve hot, topped with chopped green onions.
Tips
- Smoked turkey or beef sausage gives the perfect smoky flavor without bacon.
- Add a pinch of cayenne for a spicy kick.
- For extra creaminess, blend 1 cup of the soup and add it back in.
