Sour Cream Blueberry Coffee Cake
A delicious, moist family-favorite recipe loved for over 30 years!
Ingredients:
- 1 cup sugar
- 1/2 cup softened butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups blueberries (fresh or frozen)
Optional Cinnamon Sugar Layer:
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and grease a bundt pan.
- Cream together sugar and butter until fluffy.
- Add eggs, vanilla, and sour cream.
- Mix dry ingredients separately and add to batter.
- Fold in blueberries gently.
- Optional: Add half the batter, sprinkle cinnamon sugar, then add the rest.
- Bake for 50–60 minutes.
- Cool 15 minutes, remove from pan, and serve.
